Chicken Koyla Karahi

Chicken Koyla Karahi

Ingredients:

  • Chicken Karacih Cut - 1 kg
  • Oil - 1 Cup
  • Onion Chopped - 1
  • Tomatoes Thinly Chopped - 4 large
  • Fenugreek Seeds - t tsp
  • Ginger Thinly Sliced -1 tbsp
  • Garlic Paste - 1 tbsp
  • Salt to Taste
  • Red Chili Crushed - 1 tbsp
  • Cumin - 1 tbsp
  • Coriander Powder - 1 tbsp
  • Fenugreek Leaves Dried - 1 tsp
  • Green Chilies - 6
  • Onion Shell - 1
  • Piece of Coal - 2

Cooking Directions:

  • Heat ½ cup of oil in a saucepan and add chopped tomatoes. Cook until tomatoes are tender like paste. Keep it in a separate bowl. 
  • Heat remaining half cup of oil in another saucepan. Add fenugreek seeds. When fenugreek seeds crackle, add thin chopped onions. When onions change color add ground garlic. Fry for 2 to 3 minutes
  • Now add chicken and fry for 4 to 5 minutes add salt and crushed red chili and mix well. 
  • Add tomato paste (already prepared) mix well and cover. When chicken is tender and gravy is formed, add crushed cumin, coriander powder, ginger, dried fenugreek, and green chili. Mix well and cover for 5 minutes. 
  • For koyla dum, take a shell of onion place in karahai. Heat a piece of coal and place burning coal on onion shell. Drop few drops of oil on coal and cover for 5-7 minutes.
  • Koyla Karahai with beautiful aroma of coal is ready to serve.

Stuffed Bread Balls

Ingredients:

  • Potatoes boiled & peeled - 4-5
  • Boiled Eggs boiled & chopped - 2
  • Chicken boiled & shredded - 1 & ½ cup
  • Green chili paste - 1 tbs or to taste
  • Coriander leaves chopped - 2 tbs
  • Cumin crushed - 1 tsp
  • Black pepper - 1 tsp
  • White pepper - 1 tsp
  • Salt - 1 tsp or to taste
  • Chinese Salt - 1 tsp
  • Bread Slice - 10
  • Cheddar Cheese

Cooking Directions:

  • In a bowl, mash potatoes and add all the ingredients except bread and cheese. Mix well.
  • Cut corners of the bread. Dip bread in water and press to drain excess water.
  • Stuff potato filling and cheese and cover with the bread to make a bread ball. Repeat same process for all bread slices.
  • Deep fry and serve.

Buttermilk Fried Chicken

Ingredients:

  • Chicken - 1 kg
  • Oil for Deep frying
For Marination:
  • Buttermilk - 2 cups
  • Ginger Garlic paste - 2 tbsp
  • Salt to taste
  • Pepper Powder to taste
  • Garam Masala Powder - 1 tsp
For Flour Coating:
  • All Purpose Flour / Maida - 2 cups
  • Salt to taste
  • Chili powder - 2 tsp

Cooking Directions:

  • Take a mixing bowl and add in the chicken. Now add all the marination ingredients in it and mix well.
  • Let this marinate for 3-4 hours or overnight in the fridge.
  • Now remove this fridge and let it come to room temperature.
  • Take flour, salt, chili powder in a plate and mix well.
  • Dip each chicken piece in the flour mixture. Coat it well on all sides.
  • Place them in a rack  and leave it for 10 min, so that it gets dry and the flour coats each piece well.
  • Heat oil for deep frying.
  • Drop few pieces of chicken in. Don't crowd the oil. Deep fry the chicken on medium flame for 15 min. Now increase the flame and cook for 5 more min, so that it gets nice color.
  • Drain the chicken in paper towel.
  • Serve with hot sauce or ketchup.

Vegetable Cutlets

Ingredients:

For Cutlets Mixture:
  • Oil - 1 tbsp + for deep frying
  • Onion - 1 large chopped finely
  • Green Chili - 2 chopped finely
  • Ginger Garlic Paste - 1 tbsp
  • Turmeric Powder - 1 tsp
  • Carrot - 1 large chopped finely
  • Beans - 10 chopped finely
  • Salt to taste
  • Chili Powder - 1 tsp
  • Tomato Ketchup - 1 tbsp
  • Breadcrumbs - 1/2 cup
  • Garam Masala Powder - 1 tsp
  • Coriander leaves - 3 tbsp finely chopped
  • Potatoes - 2 large boiled, peeled and mashed
For Coating:
  • All Purpose Flour / Maida - 1/4 cup
  • Breadcrumbs - 2 cups

Cooking Directions:

  • Heat oil in a pan, add in onions, green chilies, ginger garlic paste and cook for a min or so.
  • Add in turmeric powder and mix well.
  • Add in veggies and mix well. Add in some salt and a splash of water and cook for 3 to 4 min.
  • Add in chili powder and mix well. Add in potatoes, ketchup, breadcrumbs, salt and mix well.
  • Add in coriander leaves and garam masala powder. Mix well. Now set this aside so it cools a bit.
  • Take small portions from this and roll it into ball, flatten it slightly and set aside.
  • Take all purpose flour in a bowl, add water and make it into a thin liquid. Now take breadcrumbs in a bowl.
  • Take cutlet and coat with the flour coating and then the breadcrumbs. Once it is well coated, drop in hot oil and fry till crispy.
  •  Drain and serve with ketchup.

Ingredients:

  • Chicken breast 2 boneless finely chopped 
  • Egg 1
  • Flour ¾ cup
  • Corn flour 1 tbsp
  • Salt 1 tsp heaved
  • Onion powder 1 tsp
  • Black pepper half tsp
  • Garlic powder half tsp
  • Paprika half tsp
  • Baking Powder ½ tsp

Cooking Directions:

  • Soak chicken breast in water for half an hour. 
  • Drain and grind to a fine mince. 
  • Mix all the spices with flour, corn flour, baking powder half tsp and all the spices and add in egg and water to make batter. 
  • Make nuggets with mince. 
  • Rolled in dry flour then in batter and deep fry.
